Pear Butter
Ingredients:
- 4 Anjou pears, peeled, cored, and chopped
- 3 1/2 tablespoons vanilla sugar syrup
- 1/2 teaspoons ground cinnamon
- 1/2 tablespoons cardamom
- 1/8 teaspoon ground cloves
Directions:
Combine the pears, syrup, and spices in a saucepan. Cover and bring to a boil. Reduce the heat
and simmer, stirring often until the pears are soft, about 25 minutes. If needed, add water and
continue cooking. Place the pear mixture in a blender and puree. Return the puree to the saucepan
and cook over medium heat, stirring constantly for about 10 minutes. You want the butter to have
the consistency of honey. This pear butter can be stored in covered containers in the refrigerator.
Vanilla Sugar Syrup
- 1 vanilla bean
- 1 cup water
- 1 cup sugar
Split the vanilla bean. In a saucepan, mix the water and sugar to dissolve the sugar. With the
tip of a knife, scrape the inside of the vanilla bean into the saucepan. Increase the heat to
high and bring to a boil. Boil 1 minute and reduce heat. Let cool completely. Refrigerate the
syrup in a covered container.
