Mango Chutney



Ingredients:

  • 1 mango, peeled, seeded, and diced
  • 2 tablespoons balsamic vinegar
  • 3/4 cup raisins
  • 1 1/2 tablespoons honey
  • 2 teaspoons fresh ginger, grated
  • 1/2 teaspoon cinnamon
  • Dash of cayenne pepper

Directions:

Mix all of the ingredients in a saucepan, bringing to a boil, stirring frequently. Reduce the heat and simmer uncovered for 5 to 10 minutes. Put the mixture in a blender, pulsing quickly to mix but not make it smooth. Chill before serving.
