Mango Chutney
Ingredients:
- 1 mango, peeled, seeded, and diced
- 2 tablespoons balsamic vinegar
- 3/4 cup raisins
- 1 1/2 tablespoons honey
- 2 teaspoons fresh ginger, grated
- 1/2 teaspoon cinnamon
- Dash of cayenne pepper
Directions:
Mix all of the ingredients in a saucepan, bringing to a boil, stirring frequently. Reduce the
heat and simmer uncovered for 5 to 10 minutes. Put the mixture in a blender, pulsing quickly
to mix but not make it smooth. Chill before serving.
