Sweet and Sour Tofu
Ingredients:
- 2 cups bell pepper, chopped
- 1 carrot, sliced thin
- 1/4 cup balsamic vinegar
- 1 teaspoon fresh gingerroot
- 3 garlic cloves, minced
- 1 can unsweetened pineapple, with juice (8 ounces)
- 1/4 cup soy sauce
- 1/2 cup apricot fruit spread
- 1/4 cup apple cider vinegar
- 1/2 cup vegetable stock
- 1 tablespoon tamari
- 1 pound firm tofu, cut into cubes
- 3/4 cup scallions, chopped
- 1 tablespoon cornstarch, dissolved in 1/4 cup dry sherry
Directions:
In a non-stick skillet, sauté bell pepper and carrot in the balsamic vinegar for 5 minutes. Add the
gingerroot, garlic, and vegetable stock and cook for 2 minutes. Add the pineapple and juice, soy
sauce, fruit spread, cider vinegar, tamari, tofu, and scallions. Remove from heat and stir in the
dissolved cornstarch, mixing well. Return to heat and stir until thickened. This is excellent with
steamed white rice.
