Vegetarian Lentil Soup
Ingredients:
- 2 large onions, chopped
- 1 small hot pepper, chopped
- 1 tablespoon olive oil
- 8 cups water
- 1 cup lentils, rinsed
- 2 teaspoons salt
- 1 1/4 teaspoons cumin
- 1/2 teaspoon pepper
- 1 teaspoon ground coriander seeds
- 2 tablespoons white rice, uncooked
- 1/4 cup lemon juice
- Dash of saffron
Directions:
In a saucepan, heat the oil and sauté the onions and pepper for 10 minutes. Add the remaining
ingredients, excluding the lemon juice. Bring to a boil, then reduce heat, cover, and cook for
25 minutes. Place the soup in a blender and puree. Return to the saucepan and heat through.
Stir in the lemon juice, cooking another 5 minutes.
Serves 8.
