Vegetarian Lentil Soup



Ingredients:

  • 2 large onions, chopped
  • 1 small hot pepper, chopped
  • 1 tablespoon olive oil
  • 8 cups water
  • 1 cup lentils, rinsed
  • 2 teaspoons salt
  • 1 1/4 teaspoons cumin
  • 1/2 teaspoon pepper
  • 1 teaspoon ground coriander seeds
  • 2 tablespoons white rice, uncooked
  • 1/4 cup lemon juice
  • Dash of saffron

Directions:

In a saucepan, heat the oil and sauté the onions and pepper for 10 minutes. Add the remaining ingredients, excluding the lemon juice. Bring to a boil, then reduce heat, cover, and cook for 25 minutes. Place the soup in a blender and puree. Return to the saucepan and heat through. Stir in the lemon juice, cooking another 5 minutes.

Serves 8.
