Sweet Potato Soup
Ingredients:
- 1/2 onion, diced
- 1/2 celery stalk, diced
- 2 yams, peeled and diced
- Salt, pepper, cinnamon, and nutmeg to taste
- 4 Bartlett pears, peeled and diced
- 4 cups vegetable stock
- 3 tablespoons maple syrup
- 1/4 cup vanilla or pear yogurt
Directions:
Sauté onion and celery until tender and add the yams and seasonings until heated through. Add the
pears and maple syrup. Stir in the vegetable stock and simmer on low until the yams are fork tender.
Place in a blender and puree. Place in serving dishes and swirl with yogurt. Sprinkle with cinnamon.
