Lentil Soup
Ingredients:
- 2 shallots, chopped
- 1 small yellow onion, chopped
- 1 cup dry green lentils
- 1 red potato, peeled, diced
- 1 tomato, peeled, diced
- 1 celery stalk, diced
- 1 carrot, diced
- 1/4 cup parsley, chopped
- 2 teaspoons olive oil
- 3 cups water
- Salt and pepper to taste
- Chopped chives, garnish
Directions:
Heat the oil in a Dutch oven and sauté the shallots and onions. Add the water and lentils,
bringing to a boil. Reduce heat and simmer, adding enough water to maintain three cups.
Cook until the lentils are barely soft. Add the vegetables and seasonings, cooking for 20 minutes.
Mash the mixture and serve warm with the chives.
Serves 4.
