Homemade Vegetable Soup
Ingredients:
- 2 carrots, peeled, chopped
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 2 1/2 tablespoons olive oil
- 2 tablespoons fresh ginger, grated
- 3 medium potatoes, peeled, cubed
- 3 medium tomatoes, chopped
- 1 cup coriander leaves, chopped fine
- 7 1/2 cups water
- 2 teaspoons salt
- 1 teaspoon cumin
Directions:
In a saucepan, heat the oil and stir-fry the carrots, garlic, onion, and ginger, heating through
for 8 minutes. Add the potatoes, tomatoes, and coriander, cooking another 5 minutes. Add in the
remaining ingredients and bring to a boil. Cover and simmer for one hour or until the potatoes
are tender.
Serves 8.
