French Onion Soup
Ingredients:
- 1 cup dry white wine
- 4 yellow onions, sliced in thin rounds
- 8 garlic cloves, chopped
- 1 tablespoon whole-wheat flour
- 4 cups vegetable broth
- Salt and pepper to taste
- 6 slices French bread, toasted
Directions:
In a Dutch oven, heat the wine until bubbly. Add the onions and reduce heat. Cook slowly, stirring
often for about 20 minutes. Add the garlic and cook an additional 10 minutes until the garlic is
browned. Add the flour, stirring well. Add the broth and bring to a boil. Reduce the heat and simmer
for 20 minutes, then season with salt and pepper. Place a slice of the French bread in a bowl and
ladle the soup over the bread.
