Chickpea Soup



Ingredients:

  • 1 cup chickpeas, soaked in water overnight, drained
  • 8 cups water
  • 1 tablespoon olive oil
  • 2 onions, chopped
  • 6 garlic cloves, chopped
  • 1 small hot pepper, chopped
  • 1/2 cup coriander leaves, chopped
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 3/4 teaspoon ground mustard seeds
  • 1/4 lemon juice

Directions:

Add the chickpeas and water in a saucepan. Bring to a boil, reduce heat, cover, and cook for 1 hour. While the chickpeas are cooking, in a frying pan stir-fry the onions, garlic, and hot pepper until golden brown. Add in the remaining ingredients and cook for 5 minutes. When the chickpeas are done cooking, add the frying pan mixture, cover, and cook for an additional hour.

Serves 8.
