Chickpea Soup
Ingredients:
- 1 cup chickpeas, soaked in water overnight, drained
- 8 cups water
- 1 tablespoon olive oil
- 2 onions, chopped
- 6 garlic cloves, chopped
- 1 small hot pepper, chopped
- 1/2 cup coriander leaves, chopped
- 2 teaspoons salt
- 1 teaspoon pepper
- 3/4 teaspoon ground mustard seeds
- 1/4 lemon juice
Directions:
Add the chickpeas and water in a saucepan. Bring to a boil, reduce heat, cover, and cook for 1 hour.
While the chickpeas are cooking, in a frying pan stir-fry the onions, garlic, and hot pepper until
golden brown. Add in the remaining ingredients and cook for 5 minutes. When the chickpeas are done
cooking, add the frying pan mixture, cover, and cook for an additional hour.
Serves 8.
