Cantaloupe Soup
Ingredients:
- 3 cups cantaloupe, diced
- 3/4 cup orange juice
- 1/4 cup lemon juice
- 2 1/2 teaspoons candied ginger, diced
- 1/2 cup rice cream
- Candied ginger, garnish
Directions:
In a blender, mix 2 cups of the cantaloupe, orange juice, lemon juice and ginger. Blend for about 1
minute until smooth. Transfer the mixture to a bowl and stir in the rice cream and remaining
cantaloupe, mixing well. Serve chilled and garnish with small pieces of candied ginger.
