Basmati Rice and Spinach Soup
Ingredients:
- 1 box frozen spinach, thawed, chopped (10 ounces)
- 1 small onion, chopped
- 1 cup basmati rice
- 1 cup vegetable broth
- 8 cups water
- 1/2 teaspoon garlic powder
- 3/4 cup plain yogurt
- Salt and pepper to taste
Directions:
Put all of the ingredients in a Dutch oven, excluding the yogurt. Cook over medium-low heat for
30 minutes, stirring occasionally. Add the yogurt, cook five minutes, and serve warm.
Serves 8.
