Basmati Rice Soup Recipe

Basmati Rice and Spinach Soup



Ingredients:

  • 1 box frozen spinach, thawed, chopped (10 ounces)
  • 1 small onion, chopped
  • 1 cup basmati rice
  • 1 cup vegetable broth
  • 8 cups water
  • 1/2 teaspoon garlic powder
  • 3/4 cup plain yogurt
  • Salt and pepper to taste

Directions:

Put all of the ingredients in a Dutch oven, excluding the yogurt. Cook over medium-low heat for 30 minutes, stirring occasionally. Add the yogurt, cook five minutes, and serve warm.

Serves 8.
