Wild Rice Salad



Ingredients:

  • 1/2 cup wild rice
  • 1 1/2 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 4 whole scallions, chopped
  • 3 garlic cloves, minced
  • 1/2 cup roasted sweet red peppers, diced
  • 2 tablespoons red wine vinegar
  • 1 teaspoon parsley, minced
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt

Directions:

Steam and drain the green beans, allowing them to cool. Drain and rinse the black-eyed peas. In a bowl, combine all of the ingredients and serve chilled.

Serves 4.
