Wild Rice Salad
Ingredients:
- 1/2 cup wild rice
- 1 1/2 cups vegetable broth
- 1 cup quinoa, rinsed
- 2 cups water
- 4 whole scallions, chopped
- 3 garlic cloves, minced
- 1/2 cup roasted sweet red peppers, diced
- 2 tablespoons red wine vinegar
- 1 teaspoon parsley, minced
- 1 teaspoon Dijon mustard
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
Directions:
Steam and drain the green beans, allowing them to cool. Drain and rinse the black-eyed peas.
In a bowl, combine all of the ingredients and serve chilled.
Serves 4.
