Spinach Salad in Garlic Sauce
Ingredients:
- 2 tablespoons extra-virgin olive oil
- 1/2 onion, chopped
- 2 garlic cloves, sliced
- 2 bags baby spinach, chopped (20 ounces each)
- 1/2 Granny Smith apple, diced
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh nutmeg, ground
Directions:
In a large skillet, heat the oil, add onion, and sauté 1 minute. Add in the garlic, cooking an
additional minute. Sprinkle with salt and pepper, turn heat to high. Blend in the greens a little
at a time in small batches. When the first batch wilts, add in more until all the greens are
added. Sauté for 1 minute until brightly colored and add the apple. Season the green mixture with
nutmeg to taste and remove from heat. Swirl in the butter until it is slightly melted. Serve hot.
