Southwestern Salad
Ingredients:
- 2 cups cooked brown rice
- 1 can black beans, drained and rinsed
- 1 3/4 cups frozen corn
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1/4 cup white wine vinegar
- 1/4 cup cilantro, chopped
- 1 small jalapeño pepper, chopped
- 3/4 teaspoon chili powder
Directions:
Mix all the ingredients in a bowl and chill in the refrigerator for about an hour before serving.
Serves 4 to 6.
