Bowtie Pasta Salad



Ingredients:

  • 3 ounces ziti pasta, uncooked
  • 3 ounces bowtie pasta, uncooked
  • 3 ounces spinach rotini pasta, uncooked
  • 1/2 cup green pepper, chopped
  • 1/2 cup red pepper, chopped
  • 1/2 cup yellow pepper, chopped
  • 1/2 cup celery, chopped
  • 1/4 carrot, chopped
  • 1/4 green olives, sliced
  • 2 teaspoons capers
  • 1/2 cup red wine vinegar
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon Dijon mustard
  • 3 garlic cloves, minced
  • 1 teaspoon fresh thyme, chopped
  • 1/4 teaspoon pepper

Directions:

Cook the pastas, rinse, and drain. Place in a large bowl. Add the green, red, and yellow peppers, celery, carrots, olives, and capers, tossing well. Mix in the pasta. In a separate bowl, mix the vinegar, basil, oregano, Dijon mustard, cloves, thyme, and pepper blending well. Pour over the pasta mixture, tossing until evenly coated.
