Black Eyed Pea Salad



Ingredients:

  • 1 can black-eyed peas, drained and rinsed (15 ounces)
  • 1 cup fresh pineapple, diced
  • 1/3 cup celery, diced
  • 1/4 cup red onion, diced
  • 2 roasted red bell peppers, sliced
  • 1/4 cup cilantro, chopped
  • 1 jalapeno chili, seeded and diced
  • 2 tablespoons Dijon mustard
  • 3/4 teaspoons cider vinegar
  • Salt and pepper to taste

Directions:

In a bowl, mix all the ingredients except the mustard and vinegar. In a separate bowl, mix the mustard and vinegar, mixing well. Season with salt and pepper, drizzle over the salad, and serve chilled.

Serves 4.
