Black Eyed Pea Salad
Ingredients:
- 1 can black-eyed peas, drained and rinsed (15 ounces)
- 1 cup fresh pineapple, diced
- 1/3 cup celery, diced
- 1/4 cup red onion, diced
- 2 roasted red bell peppers, sliced
- 1/4 cup cilantro, chopped
- 1 jalapeno chili, seeded and diced
- 2 tablespoons Dijon mustard
- 3/4 teaspoons cider vinegar
- Salt and pepper to taste
Directions:
In a bowl, mix all the ingredients except the mustard and vinegar. In a separate bowl, mix the
mustard and vinegar, mixing well. Season with salt and pepper, drizzle over the salad, and
serve chilled.
Serves 4.
