Green Bean Salad
Ingredients:
- 1 package frozen French cut green beans, thawed (16 ounce)
- 1 can black-eyed peas (16 ounce)
- 2 tomatoes, chopped
- 1/2 cup parsley, chopped
- 4 scallions, chopped
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Juice of 2 lemons
Directions:
Steam and drain the green beans, allowing them to cool. Drain and rinse the black-eyed peas.
In a bowl, combine all of the ingredients and serve chilled.
Serves 4.
