Spicy Portabella Mushrooms



Ingredients:

  • 3 garlic cloves, minced
  • 1 onion, chopped
  • Vegetable broth for sautéing
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 large portabella mushroom, sliced
  • 2 tablespoons tomato paste
  • 1 tablespoon low-sodium soy sauce
  • Your choice of hot sauce, cayenne pepper, or hot pepper oil to taste

Directions:

In a non-stick skillet, sauté the garlic and onion in the broth until the onions are tender. Add the red and green bell peppers and mushroom slices, and cook for 8 to 10 minutes or until the mushrooms have released their moisture. Add the remaining ingredients, mixing well. Serve hot on noodles or rice.

Serves 4.
