Spicy Portabella Mushrooms
Ingredients:
- 3 garlic cloves, minced
- 1 onion, chopped
- Vegetable broth for sautéing
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 large portabella mushroom, sliced
- 2 tablespoons tomato paste
- 1 tablespoon low-sodium soy sauce
- Your choice of hot sauce, cayenne pepper, or hot pepper oil to taste
Directions:
In a non-stick skillet, sauté the garlic and onion in the broth until the onions are tender. Add the
red and green bell peppers and mushroom slices, and cook for 8 to 10 minutes or until the mushrooms
have released their moisture. Add the remaining ingredients, mixing well. Serve hot on noodles or rice.
