Spinach and Dill Rice
Ingredients:
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 tablespoon vegetable oil
- 2 tablespoons fresh dill, chopped
- 1 can tomato sauce (15 ounce)
- 1 package frozen spinach, thawed (10 ounce)
- 1/2 cup water
- Salt and pepper to taste
Directions:
In a saucepan, heat the oil and sauté the onions. Add the garlic and dill, sautéing for 2 minutes.
Add the tomato sauce, bringing to a boil. Reduce heat and simmer for 10 minutes. Add the spinach
and water, bringing to a boil for 1 minute, stirring. Cover and simmer on low for 15 minutes.
Serve over steamed rice.
Serves 6.
