Latke Potato Recipe
Ingredients:
- 2 cups potatoes, peeled and shredded
- 1 cup onion, chopped
- 1 cup toasted wheat germ
- 2 egg whites
- 1/2 teaspoon fresh ground pepper
- 1/2 teaspoon salt
- Vegetable cooking spray
Directions:
Preheat the oven to 425 degrees. In a bowl, mix all the ingredients, creating a batter. Spray
two baking sheets with cooking spray. Drop batter by 1/4-cup onto the sheet and press down.
Bake 15 minutes, turn, and bake 10 minutes longer or until golden brown. Serve with applesauce
or sour cream.
Makes 14 latkes.
