Gnocchi
Ingredients:
- 1/4 cup non-fat ricotta cheese
- 1 cup potatoes, mashed
- 1 3/4 cups flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Directions:
In a bowl, mix the ricotta cheese, potatoes, flour, salt, and pepper. Add a little more flour
if needed to create dough. On a floured surface, roll out circular pieces of dough approximately
1 inch in diameter. Using your thumb, depress the dough in the shape of a shell. Place on a cookie
sheet and refrigerate. Boil 2 quarts of water, add the gnocchi, and boil for 7 minutes. Serve with
marinara sauce.
