Gnocchi



Ingredients:

  • 1/4 cup non-fat ricotta cheese
  • 1 cup potatoes, mashed
  • 1 3/4 cups flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions:

In a bowl, mix the ricotta cheese, potatoes, flour, salt, and pepper. Add a little more flour if needed to create dough. On a floured surface, roll out circular pieces of dough approximately 1 inch in diameter. Using your thumb, depress the dough in the shape of a shell. Place on a cookie sheet and refrigerate. Boil 2 quarts of water, add the gnocchi, and boil for 7 minutes. Serve with marinara sauce.
