Spinach Pizza
Ingredients:
- 2 whole pita bread
- 1 package frozen spinach, drained (10 ounces)
- 1/3 cup nutritional yeast
- 1 onion, chopped
- 5 plum tomatoes
- 1 cup fresh mushrooms, chopped
- 4 garlic cloves, minced
- 1 teaspoon basil
- 1 teaspoon cayenne pepper
- 1 teaspoon parsley
- 3/4 cup rice milk
- 4 tablespoons flour
Directions:
Preheat the oven to 425 degrees. In a saucepan, heat the milk and when hot, add the flour,
whisking to remove any lumps. When it begins to thicken, reduce the heat. Add the yeast and
spinach, stirring constantly until thick, about 4 minutes. In another saucepan, sauté the onion
and garlic until tender. Stir in the tomatoes, mushrooms, and spices and sauté for 1 minute.
With a sharp knife, split the pita bread so each is two flat rounds. Place on a cookie sheet and
spread with the spinach mixture. Top with the tomato mixture. Bake for 6 to 7 minutes.
