Pasta Primavera
Ingredients:
- 1 pound of pasta, cooked and drained
- 1 cup of zucchini, sliced
- 1 cup broccoli florets
- 1 cup fresh mushrooms, sliced
- 1 cup tomatoes, diced
- 1/2 cup carrots, sliced
- 10 black olives, sliced
- 3 green onions, chopped
- 1 cup vegetable broth
- 2 1/2 teaspoons Italian seasoning
- 3 garlic cloves, minced
- 1/2 teaspoon crushed red pepper
- Salt and pepper to taste
Directions:
Steam the broccoli and carrots for about 3 or 4 minutes or until the broccoli is bright green.
Add the zucchini and steam an additional 2 minutes. Add the mushrooms and take off the heat.
Add the tomatoes and olives. Put 1 tablespoon of vegetable broth in a saucepan and sauté the
garlic and onion. Add the spices, stirring until well mixed. Reduce the heat and simmer so it
is about half the amount. Remove from heat, add the pasta and vegetables, and toss to coat evenly.
