Fettuccine with Chili Corn Sauce
Ingredients:
- 12 ounces of fettuccine, cooked and drained
- 3 garlic cloves, minced
- 1 package soft tofu (12 1/3 ounces)
- 1/2 cup soymilk
- 1/3 cup parmesan cheese, shredded
- 2 cups cooked corn
- 1 hot chili, chopped
- 1 teaspoon salt
- Fresh ground pepper
- Vegetable broth
- Vegetable cooking spray
Directions:
Spray a skillet with cooking spray. Add the garlic, cooking until golden brown. If needed, add
a teaspoon of vegetable broth. In a blender or food processor, mix the tofu, milk, 1/3 cup of
parmesan cheese, and the cooked garlic, processing until smooth. Add the fettuccine and toss to
coat. Stir in the corn, chilis, and salt. Warm through on low heat, stirring frequently.
Season with pepper and serve topped with the remaining parmesan cheese.
