Baked Ziti
Ingredients:
- 1 cup ziti pasta, uncooked
- 1 cup tomato sauce
- 1 cup medium salsa
- 3/4 cup fat-free ricotta cheese
- 1 cup fat-free mozzarella cheese
- 1 can corn, drained (10 1/2 ounces)
- 1/2 cup green chilies, chopped
- 1 teaspoon dried oregano
- 1/8 teaspoon pepper
- 1 tablespoon fat-free Parmesan cheese
- Vegetable cooking spray
Directions:
Cook the pasta and drain. Preheat the oven to 375. Spray an 8-inch baking dish with the cooking
spray. In a bowl, mix the tomato sauce and salsa, blending well. In a separate bowl, mix the
ricotta cheese with half of the mozzarella cheese. Stir in half of the sauce mixture with the
corn, chilies, oregano, and pepper. Add the cooked pasta, mixing well. Place in the prepared
baking dish. Pour the remaining sauce over the top of the pasta and sprinkle with the remaining
mozzarella and Parmesan cheese. Cover and bake for 20 minutes and then uncover and cook an
additional 15 minutes.
