Chili Relleno Bake
Ingredients:
- 1 cup skim milk
- 4 egg whites
- 1/3 cup flour
- 3 cans whole green chilies (4 ounces each)
- 1/2 pound non-fat Jack cheese, grated
- 1/2 pound non-fat Cheddar cheese, grated
- 1 cup salsa
- Vegetable cooking spray
Directions:
Preheat the oven to 350 degrees. Spray a 1 1/2-quart baking dish with cooking spray. In a blender,
add the milk, egg whites, and flour, mixing until creamy. Drain and split the chilies and place
1/3 of them on the bottom of the prepared baking dish. Place 1/3 of each of the cheeses over
the chilies. Pour 1/3 cup of the milk/egg mixture on top of the cheese. Continue the layers two
more times. Finally, spread the salsa on the top and bake for 1 hour and 15 minutes or until set.
