Vegetarian Burrito
Ingredients:
- 1 cup cooked white rice
- 1 can black beans, drained
- 1 cup mushrooms, chopped
- 1 cup frozen greens or spinach, thawed and chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup chipotle chili salsa
- Fat-free burrito wrappers (for added flavor, use the jalapeno wrappers)
Directions:
Sauté onion and garlic in water or vegetable stock then add the remaining ingredients and
cook for 10 minutes. Fill the centers of the wrappers with the mixture, and top with extra salsa.
