Jalapeño Veggie Burger
Ingredients:
- 1 onion, chopped
- 1 Roma tomato, chopped
- 1 jalapeno chili, seeded and chopped
- 1 garlic clove, minced
- 1 to 1 1/2 teaspoons chili powder
- Salt and pepper to taste
- 1 can kidney beans, drained (16 ounces)
- 5 tablespoons barbecue sauce
- 2/3 cup breadcrumbs
Directions:
In a bowl, mix all the ingredients except the kidney beans, barbecue sauce, and bread.
In a separate bowl, mash the beans. Add the onion mixture and barbecue sauce until well blended.
Add the breadcrumbs into the onion and barbecue sauce just until moistened. Fry the burgers
in a non-stick skillet.
