Tamale Pie
Ingredients:
- 4 Boca Burgers
- 1 1/2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 jar salsa (16 ounces)
- 1 can refried beans (15 ounces)
- 1 can vegetable broth (14 1/2 ounces)
- 1/2 cup fresh cilantro, chopped
- 2 rolls of prepared polenta, sliced 1/3-inch thick (1 pound each)
- 3 cups shredded fat-free sharp Cheddar cheese
- Salt and pepper to taste
Directions:
Cook burgers and break into chucks. In a bowl, mix the burger, chili powder, and cumin. Add the salsa,
beans, and vegetable broth. Transfer to a saucepan, simmer for about 10 minutes until the mixture
thickens, stirring often. Add in the cilantro and season with salt and pepper. Heat the oven to 350
degrees. Place one roll of the polenta in a baking dish. Top with the burger mixture and 1 1/2 cups
of the cheese. Top with the other roll of polenta, the remaining cheese, and the remaining cilantro.
Bake uncovered for about 35 minutes or until the tamale pie bubbles.
Serves 8.
