Beefless Stroganoff
Ingredients:
- Vegetable broth for sautéing
- 1 onion, chopped
- 5 cups mushrooms, sliced
- 1 teaspoon paprika
- 1/4 cup flour
- 6 vegetable burgers, cubed
- 1/2 cup cooking sherry
- 1/2 cup white cooking wine
- 6 tablespoons plain yogurt
- 1/2 teaspoon mild mustard
Directions:
In a saucepan, add a little vegetable broth and sauté the onion, mushrooms, and paprika. Add the flour
and cubed burgers, mixing well. Brown for 2 to 3 minutes and add the wine and sherry. Simmer on low
for 10 to 13 minutes, stirring often. If the mixture becomes too dry, add a little more broth.
Add the yogurt and mustard. Remove from heat and toss to coat well. Serve hot.
