Tiramisu Rice
Ingredients:
- 1 cup uncooked rice
- 2 1/2 cups vanilla soymilk
- 1 tablespoon instant coffee
- 1/4 teaspoon salt
- 2 cups frozen fat-free whipped topping, thawed
- 3/4 cup fat-free ricotta cheese
- 1/2 cup powdered cheese
- 2 1/2 tablespoons coffee liqueur
- Unsweetened cocoa
Directions:
In a saucepan, mix the rice, soymilk, instant coffee, and salt. Slowly bring the mixture to a boil.
Reduce the heat, cover, and simmer for 15 to 17 minutes or until the rice is cooked and tender.
Cover and refrigerate until thoroughly chilled. In a bowl, mix the cooled rice mixture, whipped
topping, ricotta cheese, sugar, and coffee liqueur, mixing well. Spoon into individual serving
dishes, sift cocoa on top, and chill 1 hour before serving.
