Sour Cream Cake
Ingredients:
- 5 to 6 tablespoons applesauce
- 2/3 cup sugar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1 cup fat-free sour cream
- 1 egg or 2 egg whites
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1 1/2 cups flour
- 1/4 cup raisins
- 1/4 cup dried cherries or cranberries
- Vegetable cooking spray
Directions:
Preheat the oven to 350 degrees. In a bowl, mix the applesauce, sugar, vanilla, salt,
and sour cream, whisking until well blended and smooth, then whisk in the eggs. In a
separate bowl, mix the baking powder, baking soda, and flour. Slowly combine with the
sour cream mixture until creamy. Add in the raisins and cherries or cranberries. Spray
a loaf pan with the cooking spray and pour in the batter. Bake for 40 to 50 minutes.
Cool for 10 minutes before cutting.
