Peach Cobbler
Ingredients:
Filling:
- 3 fresh peaches, sliced
- 2 tablespoons sugar
- 2 teaspoons lemon juice
- 1/2 teaspoon cornstarch
Dough:
- 1 cup flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 teaspoons cold butter
- 1/4 cup hot water
Directions:
Preheat the oven to 425 degrees. In a bowl, mix the peaches with the sugar, lemon juice,
and cornstarch. Pour into an 8-inch baking dish and bake for 10 minutes. While the peaches
are in the oven baking, make the dough. In a bowl, mix the flour, sugar, baking powder,
and salt. Once blended, cut in the butter with a fork until it resembles coarse crumbs.
Remove the peaches from the oven and drop tablespoonfuls of the dough on top. Return to the
oven and bake for about 25 minutes or until golden brown.
