Molasses Cookies
Ingredients:
- 1/2 cup molasses
- 2/3 cup hot water
- 3/4 cup gold, seedless raisins
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1 3/4 cups unbleached flour
- Vegetable cooking spray
- Brown sugar
Directions:
Preheat the oven to 350 degrees. In a saucepan, mix the molasses, water, and raisins.
Bring the mixture to a boil, and let boil for 5 minutes, stirring frequently.
Allow the mixture to completely cool to room temperature. In a bowl, mix all of the
other ingredients. Stir into the cooled raisin mixture and blend until smooth and creamy.
Spray a cookie sheet with cooking spray and place rounded teaspoons on the cookie sheet
about 1 inch apart. Sprinkle the top of the cookies with brown sugar and bake for 10 minutes.
