Lemon Sour Cream Pie
Ingredients:
- 1 1/2 cups Grapenuts
- 1/8 cup maple syrup
Directions:
Stir the mixture together and press into the bottom of a 9-inch pie pan. Chill while the
filling is being made.
Filling
- Juice of 2 lemons
- 3/4 cup sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 1 cup water
- 3 tablespoons egg substitute
- 1 cup fat-free sour cream
Grate the peel off the lemons; set aside. Squeeze the juice to 1/3 cup. In a saucepan, mix the
sugar, cornstarch, and salt. Whisk in lemon peel, water, and egg. Cook on medium heat for 5
minutes until the mixture thickens. Set aside and let cool for 30 minutes at room temperature.
Stir in the sour cream and pour into the prepared piecrust. Chill for 30 minutes and serve chilled.
