Granola Bars
Ingredients:
- 1 1/2 cups fat-free granola
- 1 1/2 cups whole-wheat flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon cream of tartar
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- 3/4 cup honey
- 3 1/2 ounces sweet potato puree
- 2 egg whites
- 1 1/2 teaspoons vanilla extract
- 1 cup raisins
Directions:
Preheat the oven to 350 degrees. In a food processor, blend the granola until it is fine.
In a bowl, mix the granola, flour, baking soda, cream of tartar, cinnamon, cloves, and
nutmeg, mixing well. In another bowl, mix the honey, sweet potato puree, egg whites,
vanilla extract, and raisins. Gently add the dry mixture into the honey and sweet potato
mixture, blending well but not over mixing. Drop by rounded spoonfuls onto a non-stick
cookie sheet and bake for 10 minutes or until lightly brown.
