Ginger Molasses Cookies



Ingredients:

  • 1/2 cup brown sugar
  • 1 tablespoon prune juice
  • 3/4 cup molasses
  • 1/3 cup unsweetened apple juice
  • 3 cups unbleached flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Vegetable cooking spray

Directions:

With an electric mixer, beat the brown sugar, prune juice, and molasses. Add the apple juice, blending until smooth. Add the flour, baking soda, ginger, cinnamon, and salt, again blending until smooth. Cover and refrigerate about 4 hours. Preheat the oven to 350 degrees. Spray the cookie sheets with cooking spray. Roll the chilled dough into 3/4-inch balls. Place on the cookie sheet and using the bottom of a glass drinking glass that has been dipped in flour, press the cookies down. Bake for 10 to 12 minutes or until golden brown. For crisp cookies, simply bake an additional minute.
