Dessert Crepes
Ingredients:
- 4 eggs
- 2 cups flour
- 1 1/2 cups low-fat soymilk
- 1/4 cup applesauce
- 2 tablespoons sugar
- Dash salt
- Extra virgin olive oil
- Lemon juice
- Powdered sugar
Directions:
In a blender, mix the eggs, milk, and applesauce. Add the sugar, and salt, blending until smooth.
Slowly blend in the flour, again until creamy and smooth. Heat a non-stick skillet or crepe pan
with just a little extra virgin olive oil. Pour about 1/4 cup of the batter, tilting the pan so
there is a uniform circle covering the entire bottom.
Cook until light brown and then turn, cooking until light brown. Let the crepes cool for about 1
minute and then roll up. Sprinkle with a few drops of lemon juice and powdered sugar. These crepes
can be eaten as is or with fresh fruit or fruit spread. Or for extra sweet crepes, spread some
melted chocolate inside them.
