Chocolate Pie



Ingredients:

  • 1 1/2 cups sugar
  • 6 tablespoons cocoa
  • 1/3 cup plus 1 teaspoon cornstarch
  • 1/2 teaspoon salt

Directions:

In a saucepan, mix the above ingredients. Over medium heat, slowly add:

  • 1 1/2 cups skim milk
  • 1 1/2 cups canned evaporated skim milk

Cook for 15 to 30 minutes, stirring constantly until the mixture comes to a boil. When the mixture reaches a boil, allow it to boil for 1 minute, stirring constantly. Divide the mixture and to one-half add:

  • 3 eggs

Stir until well blended and then add back to the saucepan with the other half. Boil an additional minute and then add:

  • 1/3 teaspoon vanilla

Mix well and pour into a prepared piecrust. Place a sheet of wax paper on top of the hot mixture to prevent cracking. Refrigerate for 24 hours and serve with whipped topping.
