Cheesecake
Ingredients:
- 2 packages non-fat cream cheese, softened (8 ounces each)
- 3/4 cup sugar
- 1 tablespoon flour
- 2 teaspoons vanilla extract
- 1/2 teaspoon lemon peel or juice
- 1/2 cup non-fat sour cream
- 3 egg whites
- 1/2 cup graham cracker crumbs
- 2 cups strawberries, blueberries, or cherries
- Vegetable cooking spray
Directions:
Preheat the oven to 325 degrees and spray a pie pan with cooking spray. With a mixer, blend
the cream cheese, sugar, flour, vanilla, and lemon until smooth. Blend in the sour cream and
egg whites. Sprinkle the bottom of the pie pan with the graham cracker crumbs and then pour
the sour cream/cream cheese mixture onto the crumbs. Bake for about 40 minutes, cool, and
then refrigerate for at least 3 hours before serving. Top with the berries of your choice.
