Vegetarian Black Bean Casserole
Ingredients:
- 1 can black beans
- 1 can no-fat vegetarian refried beans
- 1 can mild enchilada sauce
- 20 corn tortillas
- Raisins
Directions:
Preheat the oven to 350 degrees. Mix all of the beans and half of the enchilada sauce in a bowl,
mixing well. Stir in the raisins. Cut the corn tortillas into bite-size pieces. In an 8 x 8-inch
baking dish, layer the tortillas, half of the bean mixture, another layer of tortillas and bean
mixture. Pour the sauce on top and bake for 40 to 50 minutes.
