Tamale Casserole
Ingredients:
- Vegetable broth for frying
- 1 onion, chopped
- 2 jalapeno peppers, seeded and chopped
- 1 can black beans, rinsed and drained
- 1 1/4 cups frozen corn
- 3/4 cup yellow corn meal
- 2 fresh tomatoes, chopped
- 1 1/4 cups skim milk
- 2 teaspoons chili powder
- 1/2 cup non-fat cheese, shredded
Directions:
Preheat the oven to 350 degrees. Sauté the onion and jalapeno peppers in the vegetable broth.
Add in the remaining ingredients, heating through. Transfer to a 1 1/2-quart casserole dish
and sprinkle with cheese. Bake for 30 minutes or until heated through and bubbly.
