Tamale Casserole



Ingredients:

  • Vegetable broth for frying
  • 1 onion, chopped
  • 2 jalapeno peppers, seeded and chopped
  • 1 can black beans, rinsed and drained
  • 1 1/4 cups frozen corn
  • 3/4 cup yellow corn meal
  • 2 fresh tomatoes, chopped
  • 1 1/4 cups skim milk
  • 2 teaspoons chili powder
  • 1/2 cup non-fat cheese, shredded

Directions:

Preheat the oven to 350 degrees. Sauté the onion and jalapeno peppers in the vegetable broth. Add in the remaining ingredients, heating through. Transfer to a 1 1/2-quart casserole dish and sprinkle with cheese. Bake for 30 minutes or until heated through and bubbly.
