Baked Lima Bean Casserole
Ingredients:
- 1 package vegan "bacon" (6 ounces)
- 1 package frozen lima beans, thawed, drained (24 ounces)
- 1 can tomato sauce (8 ounces)
- 2 teaspoons oil
- 1/2 onion, chopped
- 1/2 cup plus 2 tablespoons molasses
- 2 tablespoons nutritional yeast
Directions:
Preheat the oven to 350 degrees. Fry the "bacon" in oil in a frying pan until crisp. Remove,
drain, and cut into small pieces. Cook the lima beans in boiling water for 10 minutes, drain.
In a medium, ovenproof baking dish, mix all the ingredients together. Cover and bake for 30 minutes,
then serve warm.
Serves 4.
