Lentil Casserole
Ingredients:
- 2 2/3 cups water
- 3/4 cup lentils, uncooked
- 1/2 cup brown rice
- 3/4 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- 1 1/4 cups white wine
- 2 garlic cloves, minced
- 1/2 teaspoon basil
- 1/4 teaspoon oregano
- 1/4 teaspoon thyme
- 1 ounce cheddar cheese, shredded
- Salt and pepper to taste
Directions:
Preheat the oven to 350 degrees. In a bowl, mix all of the ingredients, excluding the cheese.
Pour into a 1 1/2-quart casserole dish and bake uncovered for about 1 1/2 to 2 hours. The
casserole will be done when moist but not runny. Sprinkle with the cheddar cheese and let it
melt for about 5 minutes before serving.
