Homemade Oatmeal Pancakes
Ingredients:
- 1/2 cup white flour
- 1/2 cup whole-wheat flour
- 1 cup quick cooking oatmeal
- 1 cup soymilk
- 2 tablespoons sugar
- 1/4 cup unsweetened applesauce
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 tablespoons egg substitute
- Vegetable cooking spray
Directions:
In a bowl, mix all of the ingredients until creamy and smooth. Spray a skillet with cooking spray
and pour 1/4 cup of the batter onto the hot skillet. Brown one side, flip and brown the other side.
These pancakes are excellent with honey, maple syrup, or fresh fruit spread.
Makes 10 to 12 pancakes.
