Lemon Yogurt Muffins
Ingredients:
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 1/4 cup plain yogurt
- 1/4 cup rice or soymilk
- 1/4 cup sugar
- 2 tablespoons honey
- 1/2 cup lemon juice
- 1 tablespoon grated lemon peel
Directions:
Preheat the oven to 375 degrees. In a bowl, mix the flour, baking powder, baking soda, salt,
and sugar. In a separate bowl, mix the eggs, yogurt, lemon juice, milk, honey, and grated
lemon peel. Slowly mix the dry ingredients with the wet ingredients. Bake the muffins for
about 20 minutes or until done.
