Strawberry and Raisin Scones
Ingredients:
- 2 cups flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup applesauce
- 1/2 cup milk
- 4 egg whites
- 1 cup raisins
- 1/2 cup strawberry fruit spread
- Vegetable cooking spray
Directions:
Preheat the oven to 425 degrees and spray an 8 x 8-inch baking dish with cooking spray. In a bowl,
mix all the dry ingredients. In a separate bowl, blend all of the wet ingredients, including the
raisins but excluding the fruit spread. Slowly add the wet ingredients in with the dry ingredients,
mixing until well blended. Pour half of the mixture into the pan, spreading out evenly. Spread on
the strawberry fruit spread and then top with the remaining dough. Bake for 20 to 25 minutes or until
a toothpick inserted in the center comes out clean. Serve warm with extra fruit spread.
