Strawberry Scones
Ingredients:
- 1 1/2 cups flour
- 1 cup quick oats
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 egg white, lightly beaten
- 3/4 cup non-fat vanilla yogurt
- 1/2 cup fresh strawberries, chopped
- Vegetable cooking spray
Directions:
Preheat the oven to 375 degrees. In a bowl, mix the flour, oats, sugar, baking powder, and baking
soda. Stir in the egg white and enough of the yogurt to form stiff dough. Carefully add in the
strawberries, blending well. Form the mixture into a ball and turn onto a floured surface. Pat
down into an 8-inch circle.
Spray a cookie sheet with the cooking spray and place the dough on the sheet. Cut the circle into
12 wedges, separating each wedge so there is about 1/2-inch space in between. Brush the wedges
with the beaten egg white. Bake for 20 minutes or until the scones are golden brown, cool, and
then serve with fresh fruit.
