Banana Oatmeal Scones
Ingredients:
- 2 cups flour
- 2 cups oatmeal
- 1/4 cup sugar
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large bananas, mashed
- 3/4 to 1 cup skim milk
Directions:
Preheat the oven to 375 degrees. Using a food processor, blend 1 cup of the oatmeal until it
looks like flour. Add the flour, salt, baking powder, and sugar, and process until blended.
Next, add in the mashed bananas, mixing until creamy. Place the mixture in a bowl, adding the
other 1 cup of oatmeal and 3/4 cup milk.
Mix until soft dough forms (add a little more milk if you need to). Kneed for 3 to 4 minutes on a
floured surface and then divide into three portions. Form each into a ball and flatten to 3/4-inch
thick. Cut crosswise twice so you have 4 wedges. Bake for 25 to 30 minutes, until golden brown.
These scones are delicious with fresh fruit or marmalade.
Alternatives:
- Add dates, raisins, or dried cherries
- Add 1 teaspoons cinnamon and 1/4 teaspoon nutmeg
- Use applesauce in place of the bananas
- Replace the milk with yogurt or buttermilk
