Jalapeno Corn Bread
Ingredients:
- 1 1/2 cups yellow cornmeal
- 1/2 cup whole-wheat flour
- 1 egg
- 1 tablespoon baking powder
- 1 cup non-fat milk
- 1 can cream corn (16 ounces)
- 1/3 cup onion, chopped
- 1 can chopped green chilies (4 ounces)
- 1/4 cup red bell pepper, chopped
- 1/4 cup jalapeno peppers, chopped
- 1 teaspoon salt
- Dash pepper
- Vegetable cooking spray
Directions:
Preheat the oven to 350 degrees. In a bowl, mix all of the dry ingredients. In a separate bowl,
mix the wet ingredients. Slowly add the dry ingredients to the wet ingredients, mixing well.
Spray an 8-inch pan with cooking spray. Bake for 35 to 40 minutes or until a toothpick inserted
in the center comes out clean. If you want a sweeter cornbread, add up to 1/4 cup of sugar to
the dry ingredients.
