Jalapeno Corn Bread



Ingredients:

  • 1 1/2 cups yellow cornmeal
  • 1/2 cup whole-wheat flour
  • 1 egg
  • 1 tablespoon baking powder
  • 1 cup non-fat milk
  • 1 can cream corn (16 ounces)
  • 1/3 cup onion, chopped
  • 1 can chopped green chilies (4 ounces)
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup jalapeno peppers, chopped
  • 1 teaspoon salt
  • Dash pepper
  • Vegetable cooking spray

Directions:

Preheat the oven to 350 degrees. In a bowl, mix all of the dry ingredients. In a separate bowl, mix the wet ingredients. Slowly add the dry ingredients to the wet ingredients, mixing well. Spray an 8-inch pan with cooking spray. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean. If you want a sweeter cornbread, add up to 1/4 cup of sugar to the dry ingredients.
